Honey Roasted Apples and Carrots

This easy recipe makes a great side to any fall meal.

1 apple, thinly sliced
1/2 cups carrots, cut into inch long thin slices
1/2 shallot, thinly slice
2 Tbsp olive oil
1 Tbsp honey
1/2 Tbsp balsamic vinegar
1 tsp rosemary
1/4 tsp salt
Preheat the oven to 400 degrees Fahrenheit. Slice the apple, carrots, and shallot. Mix the remaining ingredients in a small bowl. Line a cookie sheet with aluminum foil and spread sliced veggies in a thin layer. Drizzle with the dressing. Roast in the oven for 20 minutes or until cooked through.
