Horseradish Mustard Macaroni Salad

I love the flavor combinations of horseradish and mustard as it will give it that really nice bite! If you like it a bit less sharp, just add less horseradish. All these flavor combinations take regular macaroni salad up to the next level. If you want to see how I make it, keep reading.

1 lb elbow macaroni pasta, cooked according to package directions and then cooled (I rinse mine under cold water)
1/2 – 1 cup fat free mayonnaise (you can use regular if you want, I like Smart Beat Fat Free)
3/4 cup frozen peas and carrots, thawed
2 stalks celery, diced finely
2 tbsp. red onion, diced finely
2 tbsp. fresh parsley, finely chopped
1 tbsp. Dijon or regular mustard
2-3 tbsp. prepared horseradish
1/2 tsp salt
1/4 tsp. pepper
1/2 – 1 cup fat free mayonnaise (you can use regular if you want, I like Smart Beat Fat Free)

2 tbsp. fresh parsley, finely chopped
