Hubby Approved Chocolate Chip Muffins

Rich, chocolate muffins with chocolate chips, shredded coconut and Toffee pieces. Recipe can easily be cut in half for 6 muffins.

2 cups all purpose flour
1 cup sugar
1/2 cup unsweetened cocoa powder
1/4 tsp. baking soda
2 tsp. baking powder
1/2 tsp. salt
2 eggs
1 cup milk
1/2 tsp. vanila extract
1/2 cup vegetable or canola oil
1/2 cup chocolate chips
1/2 cup shredded coconut
1/2 cup Toffee pieces
Preheat oven 350 degrees. Spray muffin tin with nonstick spray or line with paper liners. Combine flour, sugar, cocoa powder, baking soda, baking powder and salt in large mixing bowl. In a separate bowl whisk eggs, milk, vanilla and oil until well combined. Pour wet ingredients into dry ingredients. Stir until just blended (stir about 10 seconds). Fold in chocolate chips, coconut and Toffee pieces until well distributed. Spoon and evenly distribute batter into muffin tins. Bake for 18-20 minutes. Muffins are ready when center is slightly firm to the touch but not solid. Cool for 2-3 minutes in the pan. Transfer to plate and enjoy.
