This delicious egg based recipe comes from the city of Motula which is a city in the Yucatan state of Mexico, although some other countries, like Cuba, have adopted them as well – so of course how they are prepared varies from one place to another. Aside from the fact that they are a breakfast rich in protein which is important to start the day, they are also very delicious!

2 Corn Tortillas, slightly fried (still somewhat soft)
2 Eggs
1/2 Small can of Tomate Sauce
1/4 Cup of Peas.
A couple slice of ham or turkey (deli meat style)
Refried Black Beans (from a can or homemade)
Grated Cheese (your preference)
Garlic Powder, Salt, and Pepper to season

Add the Tomato Sauce to a frying pan over medium high heat, and season it with garlic powder, salt, and pepper.
Add the peas and let cook for about 5 minutes.
In a separate frying pan, fry the eggs.
