Basundi is among favourite Indian desserts, mostly popular in Gujarat and Kolkata. Easy to make and so delicious that every one tries to make it on festivals, mainly on Bhai Dooj.

20 pounds full fat milk
½ cup sugar
½ tsp cardamom powder
¼ tsp nutmeg powder (jaifal)
2 cups fresh chopped fruits like litchi, grapes, apple, pomegranate, strawberries, custard apple etc.
2 tsp. finely chopped almonds and pistachios

Bring the milk to a boil in a broad bottomed non-stick pan.
Reduce the flame and cook on a slow flame till the volume is reduced to half. Stir in in every 2 minutes.
Add the sugar and cook on a slow flame the milk thickens like rabdi, stirring continuously.
Add fruits and cardamom powder and cook on a slow flame for another 20 minutes.
If you want yellowish color then add some milk in which few saffron strands were soaked.
Serve warm or chilled, garnished with pistachio, almond and saffron.
