Nankhatai is a shortbread cookie from India. It is very close to 'Pecan Sandies' in United States.

1 cup all purpose flour
1/2 cup ghee
1/2 cup sugar
1/2 tsp. baking powder
1/2 tsp. cardamom powder
1/2 cup crushed pistachios for garnishing.
Mix all the ingredients ,except pistachios, to make a fine dough. Now divide the dough in 6 equal parts and roll them and press them to the required shape of nankhatai. Place the crushed pistachios on the top of nankhatai. Now grease a plate with some ghee and place the nankhatai into the plate for baking. In the pressure cooker, place the stand and then place the plate of nankhatai on it and cover the cooker with another plate. Let it bake for 15 mins. Nan khatai is ready. Place it in a air tight container.
