Italian Baked Lemon Chicken

8 chicken legs (or thighs and breasts)
3 tablespoons fresh lemon juice
12 cloves garlic (sliced)
1/2 Large lemon (sliced in half and sliced length wise)
1/2 Large onion (sliced)
1 tablespoon Italian seasoning
2 teaspoons sea salt
1 teaspoon black pepper
4 tablespoons extra virgin olive oil
5 sprigs fresh thyme (or 2 tbs dried thyme)
1 jar artichoke hearts (drained)
1-2 cup brown or white rice
8 medium slices shallots (quartered length wise)
