Italian Bolognaise with Roasted Baby New Potatoes

This was an idea of mine that I\\\\\\\\\\\\\\\'d created, one day, while at work and hungry! It\\\\\\\\\\\\\\\'s a simple idea, substitute spaghetti or pasta with new potatoes. It\\\\\\\\\\\\\\\'s a very filling, satisfying one, too. Hence, I would like to share it with you. I hope you enjoy it as much as we do, at home. You can also serve it with a side salad, if you like. Serves 4

2 tablespoons of olive oil
500g of beef or lamb minced meat
1 beef or lamb stock cube
1 garlic clove, grated or crushed
4 or 5 medium sized, closed cup mushrooms, sliced
1 large onion, roughly chopped
A large, handful of cherry tomatoes, sliced into halves
Very generous handful of pre washed spinach.
500g or more, if you like, of Italian, tomato bolognaise sauce. Please refer to my recipe for a simple homemade version. Alternatively, you can use your own or even buy a sauce from the supermarket. Whatever suits you.
750g of baby new potatoes
Parmesan or grated Cheddar cheese for topping
