Italian Lemon Cookies – Anginetti

These Italian Lemon Cookies (Anginetti) are filled with lemon flavor! They are soft, pillowy and light. Perfect for tea parties or holiday dinners!

½ cup sugar
6 tablespoons unsalted butter, at room temperature
2 teaspoons vanilla extract
1 teaspoon lemon zest, grated
3 large eggs
2 cups all-purpose flour
2 teaspoons baking powder
½ tablespoon unsalted butter
1½ cups sifted powdered sugar
1 tablespoon water
1 tablespoon lemon juice
colored sprinkles (optional)
