Italian Mocha Espresso Instant Coffee Mix

International-style instant coffee mix without the expense or chemicals. This recipe makes enough to give as gifts for teachers or hostesses too. Nice to have on hand for those after-dinner moments. You could experiment and use decaffeinated coffee crystals too,

1 cup instant coffee
1 cup sugar
4 1/2 cups powdered milk
1/2 cup cocoa powder
Stir all ingredients together in large bowl. Process in blender (may have to do it in batches) until powdered. Be sure to blend it long enough, and may have to stir it once or twice. Spoon into jars or containers. Makes 7 cups of mix. Use 2 Tbsp to one small cup of hot water. Serve in little espresso cups. Delicious with whipped cream on top!

It's moist and tender thanks to sour cream in the batter, and studded with miniature chocolate chips for even more decadent flavor. 1/2 c sour cream
1/2 c vegetable oil
1/3 c milk
2 eggs
2 t vanilla extract
2 c all purpose flour
1/2 c unsweetened cocoa powder
1 (½ t) baking powder
½ teaspoon baking soda
½ teaspoon kosher salt
1 c shredded zucchini ( patted dry )
