½ large red onion cut into chunks
1 pound mixed baby potatoes halved
1 red bell pepper cut into strips
1 yellow bell pepper cut into strips
2 lbs asparagus, trimmed
4 large firm tomatoes, cut into wedges
1 Tbsp dried oregano
¼ tsp salt
½ tsp pepper
¼ tsp garlic powder
2 Tbsp olive oil
cooking spray of your choice
