Italian-Style Beef and Pepperoni Soup

Beefy soup with lots of pepperoni. Great for a cold winter day!

1 pound lean ground beef
1 (6 ounce) stick of pepperoni , sliced. (2 cups)
1 teaspoon olive oil
1 red bell pepper, seeded, chopped
1 green bell pepper, seeded, chopped
1 medium white onion, chopped
2 garlic cloves, minced
4 tablespoons ketchup
1 (10- ounce) can Rotel
1 (14.5-ounce) can diced tomatoes, undrained
2 cans cream of chicken
5 cups water
½ tablespoon Italian Seasoning
½ teaspoon dried Oregano
½ teaspoon dried Basil
½ cup of fresh Parmesan Cheese topping (optional)
