Jumbo Roasted Banana and Walnut Muffins

Super moist jumbo muffins full of roasted banana, walnut, and cinnamon flavor. These muffins are absolutely perfect with a cup of freshly brewed coffee!

4 over-ripe bananas
2 1/4 cups AP flour
1 tsp. baking soda
1/4 tsp. salt adjust to taste
1 egg
1/4 cup milk
1/3 cup olive oil
1 tsp. vanilla extract
1 packed cup dark brown sugar
2 oz. crushed walnuts
1 1/2 tsp. cinnamon
