This recipe comes from my cousin Kim. She made if for a family gathering a few years ago and I gobbled it up! It is soooo good. Being the awesome cousin that she is, she shared the recipe with me and now I make it for my hubby and me!

1 can each:
Black-eyed peas
Shoe peg corn
Black Beans
1 jar pimentos, chopped
1 jar jalapenos, chopped
1 med. Red onion, chopped
1 cup celery, chopped
(I skip the jar of pimentos and celery and add celery salt instead)
1 C Olive Oil
½ C apple cider vinegar
1 C sugar

Place all ingredients in a colander and rinse thoroughly
In a small saucepan combine olive oil, apple cider vinegar, and sugar.
Heat to dissolve.
