Kumquat Avocado Crab Tower

Just a few ingredients make up this refreshing appetizer.

5 kumquat
2 tablespoon crab meat or vegetarian crab meat
1 avocado
6 macadamia nuts
2 tablespoon crab meat or vegetarian crab meat
1 avocado

Cut the kumquat into small bits, removing the seeds but keep the peel (If you don’t have kumquat, try substituting with some orange.)
Shred the crab meat.
Peel the avocado and remove the core, then cut into small cubes.
Cut the macadamia nuts into fine pieces or flakes
Mix kumquat, crab meat and avocado.
Place a tall round cookie cutter on a serving plate, put some avocado mixture in and press down with a small spoon.
Remove the cookie cutter and sprinkle some macadamia nuts on top.
