Lamb Hotpot

We love lamb in our house and I love making a Lamb Hotpot. It is like a hearty stew covered in crunchy roasted potatoes, perfect in cold weather! The fresh rosemary compliments the tender lamb and vegetables. I also adore Lamb Hotpot because despite the prep work, it is a one pot meal! If you don’t have a pan that can go from the stove top to the oven, feel free to transfer it to a casserole dish. I varied the amount of the potatoes because you may need more or less depending on the side of

2 lb stew lamb
1 lb sliced carrots
1 c frozen peas
1 onion
8 oz mushrooms
5-8 thinly sliced, red potatoes
2 c beef broth
6 cloves of crushed garlic
2 T flour
2 c white wine
3 t Worcestershire sauce
salt and pepper to taste
1/2 c butter
2T olive oil
3 T fresh rosemary
1 lb sliced carrots
1 c frozen peas
1 onion
8 oz mushrooms
5-8 thinly sliced, red potatoes
2 c beef broth
6 cloves of crushed garlic
2 T flour
2 c white wine
3 t Worcestershire sauce
salt and pepper to taste
1/2 c butter
2T olive oil
3 T fresh rosemary
Marinate the lamb and garlic in the white wine for at least 3 hours.
Preheat the oven to 300 F
Strain the the white wine from the lamb and remove the crushed garlic cloves for chopping.
