These lemon bars have a nutty, shortbread-like crust that is not crumbly at all! The topping is a creamy, super tangy lemon curd that has a little bit of coconut milk added to it to make it extra luscious.

5 tablespoons Tapioca Starch
¼ teaspoon Real Salt
2 tablespoons Honey
3½ tablespoons Butter, cold, cut into cubes
4 Eggs
