Lemon Braised Chicken Thigh Over Quinoa

Boneless chicken thigh is kept moist and juicy by braising in a combination of white wine, vegetable stock and lemon.

6 boneless, skinless chicken thighs
1/2 C flour (seasoned w/ salt & pepper)
2 T olive oil
2 carrots, peeled and chopped
2 cloves garlic, minced
1 onion, diced
1/2 tsp dried thyme
1/2 C white wine
1 C vegetable stock (or broth)
1 lemon cut into slices (6 slices)
1/4 C parsley, freshly chopped
Salt & pepper

1 C quinoa
2 C vegetable stock (broth)
