Lemon curd chicken

I will not roast chicken any other way.Super tasty!

1 whole chicken ,3 1/2 pounds
1 tbsp herb de provence
1/2 tsp salt
1/2 tsp pepper
2 garlic cloves,grated
1/2 cup lemon curd
1 lemon
1 small onion
preheat oven 400 Place the chicken breast side up in a roasting pan. Combine curd,garlic,salt ,pepper and herb de provence.Set aside. loosen skin of chicken an rub 1/2 the mixture onder the skin.With the remaining mix ,rub on the top of skin on the bird.Slice the onion and lemon in halves and stuff into the cavity of the bird. Bake at 400 for 1 hour ,then on 350 for another hour.or until thermometer reads 180 deg.If it is getting too dark during the cooking process you can tent tin foil over top. When done,remove from oven and let stand for 10 min.
