Enjoy healthy whole-wheat lemon poppy seed pancakes any time of the day!

3 cups whole wheat flour (I use Trader Joe's white whole wheat)
4 teaspoons baking powder
scant 1 teaspoon salt
6 Tablespoons white sugar
2 Tablespoons fresh lemon zest*
1/4 cup poppy seeds
1 cup plain yogurt
2 cups milk
1/4 cup fresh lemon juice (it makes a difference!)
4 eggs
2 Tablespoons oil
2 teaspoons vanilla extract
