Lemon Shallot Vinaigrette

A lihgt and tangy dressing perfect for a big green salad.

2 tsp grated lemon zest
¼ cup fresh lemon juice
1 tbsp Dijon mustard
1 tbsp white wine vinegar
1 large garlic clove, crushed
2/3 cup extra virgin olive oil
Combine all ingredients in a small bowl and whisk until well combined. May serve immediately, or be kept in the fridge for up to 1 week.
