A buttery shortbread crust holds layers of sweetened cream cheese, a creamy lemon filling and fresh sweet whipped cream. Each bite will make your taste buds dance with a party of lemony sensation!

For the lemon filling:

1 cup granulated sugar
1/4 cup corn starch
1/4 teaspoon salt
2 egg yolks
1 tablespoon lemon zest
1/3 cup fresh lemon juice or lemon juice concentrate
1 1/2 cups boiling water
3 tablespoons butter

For the shortbread crust:

1 cup flour, unbleached or all-purpose
1/2 cup butter, very cold and cubed

For the cream cheese layer:

4 ounces cream cheese, room temperature
1/2 cup confectioners sugar
1/2 cup lite whipped topping (similar to cool whip)

For the sweet whipped cream:

1 cup heavy whipping cream
3 tablespoons confectioners sugar
1 teaspoon vanilla extract
