Light & Healthy Grilled Fish Tacos

The hubby and I concocted this amazing combo the other night with some Tilapia fillets and a few other delicious summer-y ingredients. These grilled fish tacos are perfectly light yet so satisfying and loaded with fresh flavor...not to mention their gorgeous color! A squeeze of fresh lime juice over each is a must and makes them simply irresistible! I hope you enjoy them as much as we do!

3 thin white fish fillets (we like Tilapia)
2 T. olive oil
2 limes
1 T. garlic
salt & pepper
1 mango, pureed
1 avacado, diced
1/2 head of cabbage, chopped
5-6 small flour tortillas

Marinated Taro Root

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
