Classic sour cream noodle bake made with lighter ingredients.

1 ¼ lb. 90% or 93% lean ground beef
1 (15 oz.) can tomato sauce
1 (15 oz.) can diced tomatoes with sweet onions, drained
2 cloves garlic, minced
1/2 tsp. salt
Fresh ground black pepper
8 oz. dry egg noodles
1/2 c. fat-free plain Greek yogurt
1 ½ c. low-fat cottage cheese
1 c. 2% sharp cheddar cheese, grated

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
