Lime Coconut Chicken with Coconut Rice

Chicken is incredibly flavorful not to mention the delicious coconut rice all topped with a yummy sauce.

Chicken:
2 pounds boneless, skinless chicken breasts
3 tablespoons olive oil
1 lime, zest and juice
1 teaspoon ground cumin
1 1/2 teaspoon ground coriander
2 teaspoons curry powder
1/8 teaspoon cayenne pepper
2 tablespoons granulated sugar
2 tablespoons low sodium soy sauce
1/2 cup canned coconut milk
1 Serrano, minced

Coconut Rice:
1 cup brown rice
1 cup canned coconut milk
1 cup water
