Loaded Mashed Potato Croquettes

I couldn't figure out what to do with my potatoes that were growing so many eyes, I thought they were turning to aliens. I wanted to use them right away, I couldn't wait until dinnertime. Then, I thought I would turn them into croquettes. With a crunchy outside and soft inside, these little buggers are perfect for a dinner party where baked or simple mashed potatoes won't do!

Yukon Gold Potatoes, 5 lb. bag, peeled and cut
8 oz., sliced bacon
1 cup, 2% milk
3 tbsp. butter
1/2 cup Greek yogurt, plain
Salt & Pepper
2 tbsp. each, Garlic Powder & Onion Powder
1 tsp., fresh rosemary, minced
1 cup breadcrumb, divided
4 oz., shredded Monterrey Jack cheese
3 eggs, beaten
