Lovely Lil' Gluten Free Corn Free Lemon Cakes

These little cakes were inspired by George R.R. Martin's and the HBO series Game of Thrones's young princess Sansa Stark's favorite dessert. Through out reading the books she must have had little lemon cakes for dessert 100 times. By the time I was done reading the books all I could think was, "Boy oh boy am I hungry!" They just sounded so delicious. I had to try and make something similar. I knew I wanted a nice dense cake and you may be surprised with just how many egg

1 Stick of softened Butter
1 1/4 cup of Sugar
2 large Eggs
1 Egg Yolk
1 cup of White Rice Flour
1 cup Brown Rice Flour
1/4 Tapioca Flour
1/2 Tsp. Baking Soda
1/2 Tsp. Cream of Tartar
2 Tsp. Xanthan Gum (if you are very corn sensitive you may want to sub this for Guar gum or check the filtration of the gum you are using.)
1/2 Tsp. Salt
2/3 cups of Freshly squeezed Lemon Juice (divided)
1 Tbls. Freshly Grated Lemon Zest
2/3 cups of Buttermilk (you can make your own by squeezing one lemon into regular milk)
1 Tsp. Vanilla Extract
