1 head of cauliflower
2 large eggs
1 teaspoon dried oregano
¼ teaspoon chipotle chili pepper
? cup freshly grated Parmesan
Kosher salt and freshly ground black pepper, to taste
1 ¼ cup shredded mozzarella cheese (save some for garnishing)
