Low Carb Chicken Salad

Chicken salad for the low carb diet.

1 Chopped cucumber
1 Sliced carrot
1 Chopped cabbage leaves
1 Chopped tomato
1 Coriander leaves
1 Mint leaves
4 tbsp lemon juice
Salt to taste
250gms chicken pieces
2-3 tbsp curd
1 tbsp olive oil
Take sliced pieces of chicken and boil it for 10-15 minutes. Take the water out of the chicken pieces. Add 2-3 tbsp of curd into the chicken pieces. Let it marinate for 4-5 hours before cooking. Use either oven or grill to cook the chicken pieces lightly. Make sure not to use oil while cooking, let the curd do its job. Take the chicken pieces out in the bowl and add the chopped vegetables. Add 1 tbsp olive oil into the mixture. Garnish with the mint leaves, coriander leaves and lemon juice.
