Low Carb Crockpot Lasagna! This no-noodle lasagna made with ground chicken, eggplant & cottage cheese is a healthier lasagna that’s cheesy, tasty & light! Gluten Free + Low Calorie + Low Carb

1 large eggplant
16 oz. 1% cottage cheese (I used Lactaid)
1 large egg
¼ cup red onion, diced
16 oz. no salt added marinara sauce
½ cup part-skim mozzarella cheese
½ tbsp dried parsley
¼ tsp salt
