These Low Carb Ricotta Pancakes will brighten your morning. They're bursting with lemon flavor, crisp on the outside and almost custard-like on the inside.

2 tbsp lemon juice from 1 lemon
1 cup rolled oats
1 cup low fat ricotta cheese
1 cup non fat plain Greek yogurt
1/3 cup egg whites
1/2 tsp baking soda
1 tbsp honey
