Low Fat Chocolate Zucchini Muffins (Gluten Free)

Moist, tender, chocolatey, and gluten free. Perfect way to get extra veggies in your little ones' diet.

1/3 cup boiling water
2 cups shredded zucchini
1 1/2 cups all purpose GF flour
1 1/2 tsp. xanthan gum
1/2 cup cocoa
3/4 cup sugar
1 1/4 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/4 cup applesauce
1 mashed banana
3 eggs
1 tsp. vanilla
Preheat oven to 350 degrees. In a large bowl, pour boiling water over zucchini. Add all other ingredients and stir just until well combined. Line muffing pans with muffin cups or grease the pan. Fill each muffin tin 3/4 full. For regular muffin size bake for 25-30 minutes and yields 18. For mini muffin size bake for 15 minutes and yields 48.
