Macaroni and Cheese
This is my mom's recipe for macaroni and cheese. It's quick, easy, and delicious.

3 c. skim milk
3 T. cornstarch
2 T. dry powdered mustard
8 oz. sharp white or yellow cheddar cheese, in small cubes
12 oz. dry macaroni or small shell pasta
Salt and pepper to taste

1. In a large saucepan, whisk together milk, cornstarch, and mustard over medium-low heat.
2. Continue whisking regularly until milk mixture has thickened. It will look like similar to pancake batter.
3. Meanwhile, cook pasta according to package directions; drain and set aside.
4. Once milk is thick, stir cheese. Continue stirring until cheese is melted and incorporated into the milk.
5. Stir in pasta until coated with cheese sauce.
6. Season with salt and pepper to taste.
7. Serve immediately.
