Maddur vada

Maddur vada is a very popular snack of south India. It is prepared by combining flour, semolina and spices to give a tasty and crispy texture,. It can be served as an evening snack with tea and also goes good as an appetizer for parties.

½ cup Rice flour
1 cup Maida/all-purpose flour
½ cup Semolina
1 Onion finely chopped
3 Green chilies finely chopped
1tsp.Cumin seeds
1tsp.Grated ginger
1tbsp. Coriander leaves finely chopped
1 tsp. Salt
5 Curry leaves
Oil for deep frying
* In a mixing bowl, add rice flour, Maida, semolina, salt and 1 tsp of oil and crumble with your hands. • Then add chopped onion, green chilies, cumin seeds, ginger, curry leaves and coriander leaves to the flour and combine well by adding water little at a time to form a stiff dough and rest for 10 min. • Divided the dough into small equal balls and take one ball at a time and flatten it like a vada on a sheet or butter paper. • Repeat the above step and flatten all the vada. • Heat the oil for deep frying, when hot drop 2 to 4 vada at a time and fry on a medium flame until they turn golden brown or crisp in texture. • Once done transfer the crispy Maddur vada to the serving plate and serve with chutney or tea.
