Make Ahead Stuffing

This Make Ahead Stuffing preps the day before saving you time on Thanksgiving and also goes by the names, Get in my Pie Hole Stuffing and Get in my Stuffing Hole Stuffing.

1 medium yellow onion, diced
4 celery stalks, diced
2 small apples, peeled and diced
1/2 cup (4 oz) of unsalted butter
salt and pepper to taste
1 tsp dried sage
1 tsp dried thyme
2 1/2 cups chicken stock
1 lob sweet Italian sausage (I used turkey)
2 eggs, beaten
1 cup grated parmesan cheese
8 cups dried French bread cubes
