Mango, Barley, Avocado, Chicken Chopped


Why not serve a healthful as well as delicious meal for Mother’s Day. You’ll make her happy inside and out! Not to mention you and your guests. You won’t find this meal in a buffet line or as a menu item. Plus no fighting “the worst holiday restaurant crowds” of the year. No stress when you can Chop a Chopped! :)

Bowl Ingredients:
4 cups Arugula, Chopped
1 Ripe Mango, Chopped
1 cup cooked Barley, Brown Rice, or Quinoa
10 – 12 oz. Cooked Chicken, Chopped
1/2 Avocado, Chopped
16 Grape Tomatoes, quartered
3 Green Onions, Chopped
1 cup Chopped Roasted Green Beans or Microwave Steamed Green Beans
Zing Factors:
1 cup Brussels Chopped Chips. I make these often and for this meal I served them “on the side”. Brussels Chopped Chips are a savory and healthful snack that takes just minutes to roast. I did sprinkle a few on top of my Chopped serving. They add a toasty crunch.
1/2 cup Sauerkraut, Chopped. I add this ingredient for a little extra tang and probiotic qualities.

Chopped Style Dressing Ingredients:
1 Tablespoon Olive Oil
1-2 Garlic Cloves, finely Chopped. Fresh garlic has the most health benefits. It only take a few seconds to chop a couple of cloves.
1/2 teaspoon Molasses. Honey is a good option
Juice of 1 Lemon
1/2 teaspoon dried Thyme
1/2 teaspoon dried Dill
Kosher or Sea Salt to taste
Freshly Ground Black Pepper to taste

Zing Factors: Not so much for flavor, but for their super antioxidant and high fiber qualities.
1/2 teaspoon Turmeric
1 teaspoon Chia Seeds
