Mango Crab Salad with Blueberries

Colorful and refreshing crab salad.

½ cup crab meat or vegetarian crab meat
¼ mango
¼ dragon fruit
2 tablespoons orange juice
6 blueberries
2 watercress
(I added 1/4 cup dragon fruit to the orange juice, but if you can't find it just skip it.) Prepare a plate, put the crab meat in the center like a mound. Mix mango, dragon fruit and orange juice in a blender, blend into a thick sauce. (Slowly add orange juice to achieve the right consistency. If you add too much orange juice too quickly, the sauce would turn into soup.) Pour mango sauce around the crab, and put the blueberries in a circle around the edge of the crab mound. Garnish with watercress on top of the crab. Note: Use riper and sweeter mango, since dragon fruit is usually not very sweet. When you combine the two, you get perfect balance.
