Mango Kulfi

Kulfi is a frozen milk based Indian dessert. mangoes have arrived this year and everyone\\\'s favorite fruit.. The quick and easy version of making mango kulfi.

Ingredients:
2.5 cups almond milk or cow\'s milk
2.5 cups mango puree - approx 3-4 large sized mangoes
½ cup sugar
4-5 green cardamom crushed or ¼ tsp cardamom powder
a pinch of saffron.
12-15 unsalted pistachois - blanched or soaked, peeled and sliced.
2 to 3 tbsp almond paste/almond meal. (optional)
3 tbsp rice flour or 2 tbsp corn flour dissolved in 3 tbsp almond milk or regular milk
Directions: Take saffron and almond milk in a pan. Let the almond milk boil on a low heat. Add sugar to the milk and stir. Dissolve the rice flour in 3 tbsp of milk. Continue to cook till the mixture thickens. Turn off the heat. add the almond paste or powder. Stir and let the mixture cool. Add the mango puree, chopped pistachio and mix well. Pour mango kulfi into serving bowls or kulfi molds. Freeze for 8-10 hours. Serve mango kulfi garnished with sliced pistachios.

1 small Vidalia onion
2 cloves garlic
2 15.5 oz cans diced tomatoes
1 T sugar
2 t fresh thyme leaves
1 dried bay leaf
1/2 t apple cider vinegar
1/2 t Worcestershire sauce
2 c fresh or frozen okra
salt and pepper ( to taste )
