Maple Sausage Pancake Bites

A delicious breakfast treat, & an inventive way to use up leftover pancakes!

2 lbs. bulk breakfast sausage, raw
1/2 cup maple syrup (plus extra for drizzling & dipping)
1 egg, raw
6 large pancakes, cubed
Preheat oven to 375 degrees. In a large bowl, mix raw sausage, raw egg, & syrup together. Mix in pancake pieces until evenly distributed. Form into ping-pong sized balls (can use cookie scoop). Place on foil lined cookie sheet. Drizzle some additional maple syrup over the tops. Bake for 22 - 25 minutes. Can be baked the night before & reheated in the oven the next morning, or can be kept warm in a crock-pot.
