Fabulous way to use all of those extra vegis in your garden! Start with the base and add in zucchini, peppers or whatever you have on hand. You'll be thanking me all winter long.

4 teaspoons parsley (dry)
2 teaspoons oregano
2 teaspoons thyme
4 bay leaves
4 tablespoons sugar
4 teaspoons salt
1 teaspoon red pepper flakes
1 tablespoon chili powder
4 yellow onions
4 cloves garlic
3 crookneck squash
3 zucchini squash
4 small cans tomato paste
1/2 bushel tomatoes
1/4 cup olive oil
6 bell peppers
4 anaheim peppers
1 cup fresh basil
2 teaspoons oregano
2 teaspoons thyme
4 bay leaves
4 tablespoons sugar

In a large (I mean really large - like about as big as a boiling water canner pot) cook onions until very soft - then add all of the other vegis and cook until almost done. Use low heat to prevent browning....
