MARINATED PORK SOUVLAKI

This pork will pack a punch! Really nice heat, herbacious and citrus kick and that all important fire kiss that makes any meat mouth watering. I would recommend marinating at least 24 hours. Then just roast up some peppers and onions and stuff into a warm pita with some cooling tzatziki.

2 pounds boneless pork tenderloin (cubed)
2 tbsp whole cumin
2 tbsp whole coriander
1 tsp cayenne pepper
4 cloves garlic (crushed)
1 lemon (juice and zest)
1 lime (juice and zest)
2 tbsp fresh cilantro
2 tbsp fresh parsley
2 tbsp fresh organo
2 tbsp paprika
ΒΌ cup olive oil
salt and pepper to taste
