Masala Potatoes

Are you a huge fan of mashed potatoes? If yes then I am sure you will enjoy the Indian version of it. Coming straight from a traditional Indian kitchen, this recipe has the simplicity of a regular mashed potato dish and an oomph from all the spices that go into it. Enjoyed and savored by all, this recipe can be eaten by itself or enjoyed with bread and tortillas.

Ingredients:
1) 3 potatoes.
2) 1 green chilli finely chopped
3) 1 onion
4) 1 tsp mustard seeds
5) 1 tsp corainder podwer
6) 1 tsp red chilli powder
7) 1/4 tsp turmeric powder
8) handful finely chopped cilantro for garnishing
9) curry leaves (optional but highly recommended)
10) salt to taste
11) 5 tbsp of olive oil (any other oil may also be used)

Directions:
Step 1: Boil the potatoes, peel the skin and mash them in a bowl. Keep the bowl aside.
Step 2: Chop the entire onion into thin slices.
Step 3: In a pot or a pan add 5 tbsp of oil. Add the mustard seeds and wait till they crackle.
Step 4: Once the mustard seeds crackle add sliced onions and curry leaves.
Step 5: Add the chopped green chilli to the mixture.
Step 6: Saute until the onions turn slightly golden brown.
Step 7: Then add the turmeric powder, coriander powder and red chilli powder. Stir for 1 minute.
Step 8: Add the mashed potatoes and stir for 5 minutes.
Step 9: Add the chopped cilantro to the mixture and stir.
Step 10: Add salt to taste. Switch off heat, serve and enjoy.
