For Matzo Chicken Meatballs:
1 egg, separated
2 tbsp. seltzer water
2 tbsp. chicken stock
1/2 cup matzo meal
1/4 cup eggbeaters
1/2 tbsp. canola oil
1/2 tsp. baking powder
1/2 tsp. poultry seasoning
1/2 tsp. kosher salt
1 lb. ground chicken breast
1 cup shredded zucchini
For Broth:
1/2 tsp. canola oil
2 cups chopped carrot
1 1/2 cups chopped celery
1 cup chopped onion
2 garlic cloves, minced
8 cups home-made or low sodium chicken stock
1/2 tsp. poultry seasoning
1/2 to 1 tsp. kosher salt
Fresh ground black pepper
