Meatloaf Cupcake

Meatloaf baked in a cupcake pan, "frosted" with mashed potatoes.

1 lb ground beef
1 cup ketchup, divided
1 teaspoon oregano
1 cup crushed croutons
1 1/2 tablespoons mustard
1 1/2 teaspoon minced garlic
2 tablespoons worcestershire
1/4 teaspoon black pepper
2 eggs
1 teaspoon garlic powder
2 cups mashed potatoes
1/2 cup shredded cheese

Combine all ingredients except mashed potatoes, garlic powder, and shredded cheese, and also reserving 1/2 cup ketchup. It is easiest to mix by hand. Spoon mixture into greased muffin pan. Mixture should fill all 12 cups to the brim. Sprinkle garlic powder on "cupcakes" and top with ketchup. Cook at 350 degrees for 25 minutes. Pipe mashed potatoes onto meatloaf, top with shredded cheese, and serve.
