Meatloaf muffin stuff with mash potatoes and vegetables
6
3 lbs of ground beef or ground turkey
1/4 of diced onions
1/4 of green peppers
1 whipped egg
1/4 of bread crumbs
1/2 teaspoon of salt, pepper and garlic powder
1./2 cup of whole kernel corn or chopped broccoli
8oz of mashed potatoes
4oz a shredded cheddar cheese
Large cupcake liners.
1/4 of diced onions
1/4 of green peppers
1 whipped egg
1/4 of bread crumbs
1/2 teaspoon of salt, pepper and garlic powder
1./2 cup of whole kernel corn or chopped broccoli
8oz of mashed potatoes
4oz a shredded cheddar cheese
Large cupcake liners.
After meatloaf ingredients are completed place six large cupcake liner in a muffin pan.
Roll meat into a large meatball, place in cupcake liner
Place two fingers in the center and begin to mold the meat into the size of cupcake liner
Place muffin pan in preheated oven 350 for 40 minutes
Once the meatloaf cups are done they will separate from cupcake liner
Remove meatloaf cupcake from liner and absorb excess grease with a paper towel
Place meatloaf muffin on cookie sheet
Add a sprinkle of cheese in the bottom of the cup
Two tablespoons of mash potatoes
Two tablespoons of vegetables of your choice
Two tablespoons mashed potatoes
Top with a sprinkle of cheese.
Place back in the over for 15 minutes. if you want your cheese toasted place in broiler for 10 minutes.
Serve with toss salad.
