Mediterranean Chickpea Salad

A very quick and easy side dish! It is light and refreshing. A yummy side dish! Perfect for summer. And perfect for a busy weeknight!

1 can chickpeas
1/2 red onion chopped
1 can sliced black olives (2.25 oz)
1 and 1/2 tbsp parsley
1/4 cup chopped feta cheese
1 tablespoon Extra Virgin Olive Oil
1 and 1/2 tbsp red wine vinegar
1. Rinse and drain chickpeas as well as black olives. 2 . Put chickpeas in a medium sized bowl, along with the olives. 3. Chop red onion and combine with chickpeas and olives. 4. Add parsley and feta to the bowl. 5. Add olive oil to the bowl and stir. 6. Add red wine vinegar to the bowl and stir. 7. Chill in the refrigerator for at least 30 minutes.
