Mexican Style Black Beans & Cabbage

For the Beans
1 lb dried black beans
1 medium onion, diced
1 quart chicken stock
1 tsp cumin
1 tsp smoked paprika
1/2 tsp chipotle
1 tsp garlic powder
1 tsp salt
1 tsp black pepper
For the pico de gallo
4 roma tomatoes, diced
1/2 red onion, diced
1 jalapeno, diced(with or without the seeds)
1/4 cup roughly chopped cilantro
Juice of 1 lime
salt & pepper to taste
Extras
1/2 head of cabbage, thinly sliced
cotija cheese
Add your prepared beans, onion, chicken stock & spices to the crockpot. Cook on high for 4-5 hours or low for 6-7 hours. If you notice that the liquid level is becoming low while cooking add some more stock...
