These Mini Chicken Pot Pies are a fun twist on a comfort food classic! Pot pies happen to be one of my all-time favorite comfort foods. There is something about that buttery pie crust and creamy filling that makes my tummy very happy! These Mini Chicken Pot Pies are easy to make and loaded with healthy vegetables. And who doesn't love miniature size food? So much more fun to eat!

3 tablespoons unsalted butter
1 small yellow onion, minced
1 stalk celery, thinly sliced
2 carrots, thinly sliced
5 tablespoons all-purpose flour
2 cups chicken broth
2 cups shredded rotisserie chicken
1/3 pound green beans, trimmed and cut into 1-inch pieces
