These tiny muffins are overflowing with poppy seeds & have tiny flecks of lemon zest sprinkled throughout. They're not overly sweet & make for quick breakfast on the go.

2 cups Bisquick baking mix
1 3.4oz pkg instant lemon pudding mix
1/4 cup poppy seeds
1/4 tsp grated lemon peel
2 eggs
1 cup milk
1/4 cup vegetable oil
