Mini Meatloaf

Great for dinner, or a cold sandwich the next day. Quick and easy to fix too. Plus they are in the perfect portion sizes, making this recipe perfect for those who struggle with portion control. Try adding in Parmesan cheese and Italian seasonings. Or swap the Italian dressing for BBQ sauce!

1 lb Lean Ground Been
1 lb Extra Lean Ground Chicken (Or Turkey)
1/2 Cup Breadcrumbs
1 Large Egg
1 Medium Onion, diced
2 tbsp Parsley, chopped
1 tbsp Garlic Powder or Fresh Garlic
2 tbsp Italian Dressing
Salt and Pepper, to taste
Pre-heat oven to 350 degrees. Combine all ingredients in a large bowl. Mix until all ingredients are evenly incorporated. Divide into 12 bar mini loaf pan. If you do not have a mini loaf pan shape into 12 equal sized portions. Place in oven for 20 minutes or until cooked thoroughly. Top each loaf with a squirt of ketchup.
